I’m baackk!!! After a dream wedding and honeymoon, I’m back in the saddle ready to crank out as many recipes and blog posts as possible – oh and ready to get back to normal life in general. A life that doesn’t include stress over which flowers will look best in my bouquet (peonies, roses, hydrangeas and stephanotis), if the food will be as delicious as it was at the tasting (it was!), if I forget what to do during the ceremony (I did and it was ok), the list goes on and on. Although I’m incredibly sad the family is gone, the festivities are over and the wedding dress is put away, I’m looking forward to relaxing weekends, happy hours and just being.
Just in case you want to see (you really don’t have a choice), here’s a little glimpse of our first dance as husband and wife.
Ahhh, I wish I could relive that moment forever…feels like it was a dream.
So because I was getting married in a few days, naturally I found it a fabulous idea to throw a party…yep, have a party three days before our wedding festivities began. If you are asking yourself, is she nuts?? Then the answer is an unequivocal, yes, yes I am.
To top it off, I couldn’t serve only store-bought beer and wine, I had to make a drink up – because who throws a party and doesn’t make a drink from scratch?? Am I normal? Or, again, a little nuts? Probably the latter, but eh, can’t change who I am at this point…
The only sane choice I did make was to use components I already had on hand for our signature drink of choice. They were:
Frozen fruit
Fresh raspberries
Vodka
Champs
Sugar
Just five ingredients to pure cocktail bliss.
Fruity, stiff, and effervescent, this is the perfect refreshing drink to cool off any steamy summer night.
- 2½ cups frozen mixed berries (preferably raspberries, blackberries and blueberries)
- 1 pint fresh raspberries
- 3½ cups water
- 1½ cups sugar
- 1 cup vodka
- 1 bottle of champagne
- In a medium saucepan combine water, sugar and berries. Bring to a boil and reduce to a simmer for 10-15 minutes. Let mixture cool and then strain into a pitcher.
- In pitcher combine simple syrup and vodka. Chill.
- In champagne flutes pour berry vodka mixture ½. Top off with champagne, fresh raspberries and mint.

Hey! These drinks look amazing and I want to make them for a party this weekend. How many drinks would you guess this recipe makes? Just trying to get my quantities right. Thanks Nicole!!

Ooo I like! I would say it makes about 10-12 servings. I should put these things on the recipes, huh? Also, you probably don’t need to simmer the berry simple syrup for 25 minutes. 10-15 should be fine, just let the berries cool in the syrup and then strain. I updated the recipe!
