I’m into soup. Like really into it. Pureed soups, hearty soups, cheesy soups, brothy soups, noodle soups, vegetable soups. You name a soup, I like it. I don’t even require it fancy or homemade, in fact, my favorite soup and lunch of all time, is a big bowl of ramen. I have this little method, where I only use half a seasoning packet, and 1/3 of the noodles and then go to the salad bar and load up on lots of leafy spinach, shredded carrots, mushrooms and green onions, and then go back to my office and nuke everything in the microwave for a few minutes. Semi-homemade soup in mere minutes! I have it at least twice a week.
My favorite soup I’ve made thus far in these cooler months is hands down this apple, potato and cheddar soup. The purred apples and potatoes give the soup a creamy velvety texture that feels so luxurious and tastes, well, like cream – but there’s only a splash. There’s a subtle sweetness from the apples that I love, counterbalanced by a very savory and slightly spicy kick from sharp cheddar cheese and sirracha sauce.
