If I had to choose one quintessential summer meal for me, it would have to be the BLT – no summer is complete until I’ve had it at least eight or nine times. Currently my count is at four, so I’ve still got a ways to go (Lucky me!). Thankfully, tomato season is just getting under way in our garden, so I have plenty of time to surpass my minimum consumption requirements.
In fact, we’re spending the week in Virginia Beach with Kevin’s entire family this week (think Grandparents, Aunts, Uncles, Cousins etc.), and each meal we switch off preparing for the entire group. BLTs are on the menu for lunch tomorrow, so that puts my count up to five for the season. I’m hoping by the time we get back to KC on Saturday, our seven green tomatoes that have been painfully stubborn little guys have turned into the ripe, plump beefsteak tomatoes we’ve been hoping for all summer long.
Cross your fingers!
While a classic BLT is always a winner in my book, sometimes it’s nice to put a spin on the traditional with a bit more of a complex approach, like this Caprese BLT, this Benedict BLT or today’s Farm Stand BLT. All equally delicious, but all just a little bit different. Thanks to my friends at Vlasic® I think I’ve found one of my favorite ways to enjoy this summertime classic – with pickles!!
I can’t believe it never occurred to me before now, it seems like such a simple change, but the addition really gives the sandwich a special tangy twist I love. And like I mentioned before each Farmer’s Garden® cucumber is hand-packed in a traditional mason jar and pickled using home-style canning techniques to lock in the bold, fresh taste making for the perfect accouterment to a classic BLT.
